We love a good bowl. Mushroom Boost Bitez Protein, scoop of rice or quinoa, tons of veggies, a handful of greens, and a creamy dreamy sauce, and we're happy humans. Bowls are super easy to throw together, insanely customizable, and perfect for meal prep. This high protein poke bowl recipe might just be your new fave lunch obsession.
Ingredients:
1 cup mayo
1 tbsp lime
2-3 tbsp sriracha
1-2 tsp garlic powder
1 tsp rice vinegar
½ cup dried rice - cooked
carrots, cucumbers, mangos, cilantro, bell pepper, avocado, lime (over rice)
Instructions:
1. Cook Rice
2. Mushroom Boost Bitez:
Soak: Add 1 cup hot water to seasoned bitez & soak 3 minutes. Make sure bitez are fully saturated.
Sizzle: In 1-2 Tbsp oil, pan fry the seasoned bitez in non stick pan until bitez are golden and a little crispy on sides.
3. Prep veggies:
carrots, cucumbers, mangos, cilantro, bell peppers, avocado, lime over top of rice.
4. Spicy Sriracha Sauce:
1 cup mayo
1 tbsp lime
2-3 tbsp sriracha
1-2 tsp garlic powder
1 tsp rice vinegar
